Ingredients of Vangi Batata Bhaaji
- 2-3 tsp of oil
- 2-3 cups of water
- 2 eggplants, cubed
- 2 potatoes, cubed
- 2 tomatoes, finely chopped
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 1/2 tsp sugar
- Salt to taste
- Fresh coriander and lemon juice for garnishing
How to Make Vangi Batata Bhaaji

Heat the oil; add the tomatoes, salt and red chili powder. Cook till the tomatoes soften.

Add the turmeric powder, coriander powder, cumin powder and sugar. Mix well.

Add the potatoes and eggplant. Coat them well with the masala.
4.
Pour in the water, cover and cook for the potatoes and eggplant for 15-20 minutes on a low flame.
5.
Garnish and serve the Vangi Batata Bhaaji hot.
