Ingredients of Chicken Imperial
- 350 gm corn-fed chicken boneless
- 10 gm thyme chopped
- 150 ml red wine
- 20 gm raisin
- 200 ml demi-glace
- 10 gm salt
- 5 gm black pepper
- 15 gm refined flour
- 100 ml refined oil
- 250 gm mashed potatoes
- 80 gm mushroom
- 100 gm zucchini
How to Make Chicken Imperial
1.
Season the chicken with salt, black pepper, and thyme.

Dredge the chicken lightly in refined flour and set aside.

Heat oil in a heavy bottomed pan and carefully slide the chicken with the skin side down and cook until it starts to brown and crisp.

Flip over the chicken and repeat the process.

Now, remove the chicken from the pan and put in the oven at 180c for 5-7 minutes.

Meanwhile prepare the sauce by reducing the wine by half in a sauce pan.

Add demi-glace, mushroom and raisin to the pan and reduce further, until the sauce is thick and glossy.
8.
Remove the chicken from the oven to serve with mash potatoes, vegetables and a generous drizzle of the raisin mushroom sauce.
