Crisp fried chicken topped with a glossy sauce of wine, raisins and mushrooms.

Ingredients of Chicken Imperial

  • 350 gm corn-fed chicken boneless
  • 10 gm thyme chopped
  • 150 ml red wine
  • 20 gm raisin
  • 200 ml demi-glace
  • 10 gm salt
  • 5 gm black pepper
  • 15 gm refined flour
  • 100 ml refined oil
  • 250 gm mashed potatoes
  • 80 gm mushroom
  • 100 gm zucchini

How to Make Chicken Imperial

  • 1.Season the chicken with salt, black pepper, and thyme.
  • 2.Dredge the chicken lightly in refined flour and set aside.
  • 3.Heat oil in a heavy bottomed pan and carefully slide the chicken with the skin side down and cook until it starts to brown and crisp.
  • 4.Flip over the chicken and repeat the process.
  • 5.Now, remove the chicken from the pan and put in the oven at 180c for 5-7 minutes.
  • 6.Meanwhile prepare the sauce by reducing the wine by half in a sauce pan.
  • 7.Add demi-glace, mushroom and raisin to the pan and reduce further, until the sauce is thick and glossy.
  • 8.Remove the chicken from the oven to serve with mash potatoes, vegetables and a generous drizzle of the raisin mushroom sauce.
