Ingredients of Cucumber Curd Rice

  • 1 Cup cooked rice
  • 1 Cup curd
  • Half cup grated cucumber
  • 1 Tbsp curry leaves
  • 1-2 Tbsp green chilis
  • coriander leaves , chopped
  • 2-3 Tbsp pomegranate seeds
  • 2 Tbsp peanuts
  • 1 tsp black pepper powder
  • 1 tsp cumin seeds
  • 1/2 tsp asafoetida (hing)
  • 1-2 tsp ghee
  • Salt as per taste

How to Make Cucumber Curd Rice

Begin with grating cucumber. Keep it aside.

Now in a bowl whisk curd properly and add the grated cucumber.

In the puree add salt, black pepper, and coriander and mix well.

Now add the cooked rice in the cucumber and curd puree.
5.
In a hot pan, add ghee, and add cumin seeds, asafetida, chillies, curry leaves, peanuts and saute for 1 minute.
6.
Pour the tempering over cucumber curd rice mixture and mix well.
7.
You can keep it in refrigerator for 10-15 minutes to cool the dish.
