Ingredients of Elneer Payasam

  • 2 Cups tender coconut water
  • 1 cup tender coconut flesh, thinly sliced or grated
  • 1 cup coconut milk
  • 1/2 cup jaggery (or Milk Maid of your choice)
  • 1/4 tsp cardamom powder
  • A pinch of saffron strands (optional)
  • 1 tbsp ghee (clarified butter)
  • Assorted nuts for garnish (cashews, almonds, pistachios), chopped

How to Make Elneer Payasam

In a saucepan, heat the ghee over medium heat.

Pour in the tender coconut water and bring it to a gentle simmer.

Add the jaggery to the pan and stir until it dissolves completely. Let it simmer for a few more minutes to form a syrup-like consistency.

Add the sliced or grated tender coconut flesh to the pan and mix well.

Pour in the coconut milk and stir everything together.

Add cardamom powder and saffron strands for extra flavour and aroma.

Allow the payasam to simmer for a couple of minutes on low heat, ensuring all the flavors meld together.

Turn off the heat and let the payasam cool slightly.

Garnish with chopped nuts of your choice.
