How to Make Paneer Kachori
1.
To begin with the recipe, you first need to prepare the dough. Take a mixing bowl, add all-purpose flour, salt and gradually add the ghee. Mix well by using your hands. Now, add the water as required for a soft dough.
2.
Once the dough is kneaded, set aside. Meanwhile, heat mustard oil in a kadhai, add jeera and saunf. Let them splutter together. Then add chopped onion and green chillies, saute for a while.
3.
Add the scrambled paneer, coriander powder, red chilli powder, garam masala and salt and saute for 2 to 3 minutes. Add the chopped coriander and mix well.
4.
Remove the bay leaves and discard. Allow the mixture to cool completely. Now, divide the kneaded dough into 12 equal parts and keep aside.
5.
Take one part from the dough and roll it like a ball. Once done, roll gently with the help of rolling pin.
6.
Place 2 tsps of the paneer filling in the center of the rolled dough. Cover the filling with the dough by slowly stretching it over the filling.
7.
Seal the ends and remove excess dough, roll gently again with a rolling pin.
8.
Now do the same with the remaining eleven parts. Once done, deep fry them until crisp. Enjoy your kachoris!
