Ingredients of Kashmiri Paneer Kaliya

  • 300 gms Paneer cubes
  • 2 tbsp Mustard Oil
  • 1 tbsp Cumin Seeds
  • 1 tsp Turmeric Powder
  • 2 tsp Fennel Seeds
  • 1/2 tsp Hing
  • 4 nos Cloves
  • 2 nos Bay Leaves
  • 8-9 nos Green Cardamom
  • 4 nos Black Cardamom
  • 2 nos Green chilies, sliced
  • 4-5 pieces Saffron
  • 5 cups Water
  • 1 cup Milk
  • to taste Salt
  • 1 tbsp Dried Fenugreek Leaves

How to Make Kashmiri Paneer Kaliya

In a pan, heat mustard oil. Add paneer pieces and fry them until golden brown. Remove from the pan and keep it aside.

Now add cumin seeds, bay leaves, green cardamom, black cardamom, green chillies, and cloves. Stir and allow them to splutter.

Add water to the pan and when it comes to a boil, add spices – turmeric powder, salt, and hing. Mix well so that all the ingredients are combined well.

Let the gravy boil on high flame. After it has reduced a little, add paneer pieces and cook until it turns soft and the gravy thickens.

Add 1 cup milk and a few strands of saffron and cook until it comes to a boil. At this point, you can adjust the spices of the gravy as per your taste levels. Add crushed fenugreek leaves on top of it.
6.
Turn off the gas and garnish it with chopped coriander leaves. And voila! Your Kashmiri Paneer Kaliya is ready to serve!
