1.
Start by preparing the dough for the air fryer kachori. Add maida, salt, oil, and vinegar to a bowl and mix well. Gradually add water and combine everything together to form a smooth dough.
2.
Keep the dough aside for 5 minutes, then oil your hands and knead it again for a minute or two. Transfer the dough to a bowl, cover it with a wet cloth, and let it rest for 30 minutes.
3.
For the filling, heat oil in a pan and add chopped onions to it. Saute until they turn golden brown, and then add all the dry masalas. Roast for a few seconds before adding in the besan.
4.
Now, add the matar and salt and cook again for a minute. Take off the heat and mash the mixture with the back of a spoon. Divide the dough into equal-sized portions and roll them out using a rolling pin.
5.
Take a rolled-out dough ball and place the prepared filling in the centre. Seal the edges nicely, forming a kachori shape.
6.
Preheat your air fryer to 360 degrees for 5 minutes. Place the kachoris in the air fryer basket and brush them with a little bit of ghee. You can even brush the basket a bit.
