Ingredients of Sabudana Kheer
- Sabudana (Tapioca)
- Cardamom powder and saffron
- Milk
- Sugar
How to Make Sabudana Kheer

Firstly, wash the sabudana properly in water and then drain them.

After that, soak them in 1 cup of water for around 1-2 hours. When they absorb all the water, their size will increase. If you want to use a large size of sabudana, then soak them in 2 cups of water for at least 4 hours before cooking.

Next, heat milk in a pan over medium flame. When the milk comes to a boiling phase, add soaked sabudana to it.

Add sugar and mix it well until it dissolves completely. Cook them until they turn transparent and soft for around 10-15 minutes. Make sure to stir it continuously.

Now, reduce the flame to low and add cardamom powder and dissolved saffron in it.

Stir continuously and cook until the milk turns thick. It will take approx 7-10 minutes.

Finally, turn off the flame and transfer the prepared sabudana kheer to a serving bowl. Garnish it with sliced almonds and serve warm or chilled.

Most importantly, when the kheer cools down it will become thick, as sabudana will absorb almost all the milk. If you want to serve it chilled, then add 1/2 cup milk and mix well before serving.
