How to Make Street Style Sabudana Papad
1.
Properly wash and soak sabudana for at least 4 hours or overnight if possible.

Check if it is mushy and soft and proceed.
3.
In a pan take 2 cups water and add the soaked sabudana, jeera and salt according to taste.
4.
You can add the optional ingredients too at this point.
5.
Keep stirring so it doesn’t stick to the pan, and until it reaches a porridge like consistency.
6.
Take off the flame and drizzle some lemon juice.
7.
Quickly take a spoonful and gently spread it on a parchment paper, 1 tbspn sabudana mixture should make a small sized papad.
8.
Repeat until the entire mixture is well spread into the papad shape. Do this step quickly and don’t wait for it to cool down because if it cools, it will be lumpy and the papad won’t be as crispy.
9.
Sundry the papad mixture for 2-3 days under strong sunlight or 5-6 days if you don’t get enough sun. Cover with a light cloth when drying so there is no dust on them.
10.
Once completely dried, you can fry these in hot oil and munch away!
