Ingredients of Baingan Bhurji
- 2 Brinjals, grated
- 2 Onions, chopped
- 2 Tomatoes, chopped
- 4-5 Garlic cloves
- 1/2 inch Ginger
- 1/2 tsp Whole coriander seeds, crushed
- 2-3 Whole red chillies
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam Masala
- Salt to taste
- 1-2 Green Chillies
- 1 tsp Cumin Seeds
How to Make Baingan Bhurji

Crush ginger and garlic to make paste.

Heat oil in a pan. Add red chillies and cumin seeds, saute for a minute. Add onions and saute.

When onions start browning, add ginger-garlic paste.

Then add coriander powder, turmeric powder, salt, green chilli, garam masala and saute for a minute.

Add tomatoes and cook till mushy. Add some water.
6.
Add grated baingan flakes and mix well. Cover the lid and let it all cook.
