How to make Brinjal Cutlets

Brinjal, carrots, potatoes and French beans are sauteed, mashed and coated in a mix of flavourful spices. The small round cutlets are then pan-fried until golden brown. This crispy delight makes for a perfect snack to enjoy with your evening tea or coffee.

Ingredients of Brinjal Cutlet

  • 2 Cup Brinjal Cubes (chopped)
  • 1 tbsp Oil
  • 1 cup Potatoes (peeled, chopped)
  • 1/4 cup French Beans (chopped)
  • 1/4 cup Carrots (chopped)
  • to taste Salt
  • 1/2 tsp Garam Masala
  • 1/2 tsp Amchur
  • 2 tbsp Coriander (chopped)
  • 1/4 cup Mint Leaves (chopped)
  • Bread Crumbs (as required)
  • Oil
  • 4 Green Chillies
  • 2 tsp Ginger (chopped)
  • 4 Green Chillies

How to Make Brinjal Cutlet

Heat oil in a kadhai, saute chopped brinjal, potatoes, French beans, carrots with salt. Once it is soft, remove it from heat and let it cool.

Meanwhile, prepare a paste of chopped onions, green chillies and ginger. Keep this aside.

Mash the sauted veggies and season them with garam masala, amchur powder, coriander, mint and salt. Mix well.
4.
Make small, round cutlets from the mixture and pan fry them till they are golden brown from each side.
5.
The brinjal cutlets are ready!
