Ingredients of Dum Ke Baingan
- For the base gravy:
- 500 gm Roasted peanuts
- 500 gm Roasted sesame seeds
- 500 gm Roasted desiccated coconut
- to taste Salt
- 3 tbsp Red chilli powder
- 2 tbsp Coriander powder
- 1 tbsp Jeera powder
- 0.25 tbsp Turmeric
- 5 gm Fresh mint
- 5 gm Fresh coriander
- For the tempering:
- 200 gm Oil
- 1 gm Methi seeds
- 1 gm Kalonji
- 1 gm Jeera

For the base gravy, grind the first three ingredients together to make a paste. Then mix the remaining ingredients of the gravy.

Prepare the baby brinjal by slitting into quarters ensuring to keep the brinjal intact. Shallow fry in oil and keep aside.

For the tempering, take ghee in a lagan put the methi, kalonji and cumin seeds and let it crackle. Add the curry leaves and slit green chilli.

Add ginger garlic paste and the base gravy. Add water and tamarind paste and cook till the oil rises. Add the fried brinjal and check the seasoning.
