Ingredients of Baked Gulab Jamun Cheesecake

  • 1 Cup Arrowroot powder crushed
  • 50 gram Unsalted butter melted
  • 2 cup Paneer (cottage cheese), grated
  • 2/3 cup Cream
  • 1/2 cup Castor sugar (caster sugar)
  • 3 cups Eggs separated
  • 1 Lemon rind grated
  • 1/2 tsp Almond essence
  • 200 gram Prepared mixed fresh fruits
  • 1/2 cup Almonds chopped
  • For Gulab Jamun
  • 3/4 cup Hariyali khoya/mawa
  • 1/2 cup Paneer (cottage cheese)
  • 3 1/2 tbsp Refined flour (maida)
  • 3 1/2 tbsp Cornflour/ corn starch
  • 1 1/2 cup Sugar
  • 1 tbsp Milk

How to Make Baked Gulab Jamun Cheesecake

Grease a tart tin. Combine the biscuits and butter and press into the base of the tin. Chill in a refrigerator for twenty minutes. Preheat oven to 180°C/ 350°F/ Gas Mark 4.

For the cheesecake mixture, beat together cottage cheese, cream, caster sugar, egg yolks, lemon rind and almond essence in a large bowl until the mixture is smooth and creamy.

Whisk the egg whites until stiff and fold into the cheese mixture. Place one Gulab Jamun in the middle of each cup. (If your Gulab Jamun are too big, cut it into half and place it in the middle) Pour over the biscuit base and bake in the preheated oven for forty-five minutes or until the cheesecake has risen and is just set in the centre.

Leave in the tin until completely cooled. Carefully remove the cheesecake from the tart tin. Chill the cheesecake in a refrigerator for at least one hour.
