Ingredients of Bharwan Tinda
- 500 gm tindas
- 1/4 cup clarified butter
- Mix together -
- Salt to taste
- 1 tsp mango powder
- 1/2 tsp turmeric
- 1 Tbsp coriander powder
- 1 tsp chilli powder
- 1/2 tsp ginger powder
- 1/4 tsp asafoetida
- 1 Tbsp fennel seeds
- 1/2 tsp fenugreek seed
- 1 tsp cumin seeds
- Chopped mint leaves to garnish
How to Make Bharwan Tinda

Wash the round gourd and wipe dry. Snip off both ends, and scrape off thick skin if any.

In season the vegetable is so tender that you may not need to scrape at all. Make slits like a plus sign from one end, to almost the other end, taking care not to separate the pieces.

Stuff the masala filling into the slits in the gourds, as tightly as you can. Heat the clarified butter in a heavy-based kadahi and add the round gourds into it.

Add the leftover masala if any and stir-fry over high heat till they look glossy. Lower heat and cook covered till tender.

It takes about an hour during which you should check on it a few times, and sprinkle some water if the vegetables stick to the kadahi.

Serve hot, garnished with mint leaves.
