Ingredients of Kolkata-Style Chicken Chaap
- 2 Chicken legs
- 2 Chicken Thighs
- 1 cup Hung Curd
- 2 small Onions
- 1/2 cup Roasted Besan
- 2 tbsp Ginger-Garlic Paste
- 1 tbsp Red Chilli powder
- 1 tsp Garam masala powder
- 1 tbsp Cashew paste
- A pinch of Saffron
- 2 tbsp Soaked Poppy seeds
- 1 tsp Sugar (optional)
- 1 tsp Kewra Water
- 3 tbsp Ghee
- 3 tbsp Oil
- to taste Salt
- 1 tsp Cumin Seeds
- 1 tsp Caraway seeds/shah jeera
How to Make Kolkata-Style Chicken Chaap

Take a large mixing bowl, add hung curd, onion paste, ginger garlic paste, besan, (for crunch), red chilli powder, Kashmiri red chilli powder, turmeric powder, garam masala paste and other dry spices and dry fruits and nuts like cashew nuts paste, poppy seeds, kewra water, saffron etc.

Now, take large bottomed pan and add 3 tbsp of ghee and 3 tbsp of oil. Then add, cumin seeds, caraway seeds and let them splutter.

Once done, add the marinated chicken followed by all the masala and slow cook it on low to medium heat.

Continue stirring to avoid burn and stickiness at the bottom of the pan.

Saute for 10-15 minutes or until the curry is all dried up.

Serve hot with pulao, naan or roomali roti and enjoy!
