Makara Chaula is a popular dessert from Odisha, especially prepared for the festival Makar Sankranti. Dried rice is grated and mixed with coconut, sugar, khoya, and milk, and then topped with chopped fruits and nuts.

Ingredients of Makara Chaula

  • 1 cup raw rice
  • 1 cup grated coconut
  • 1/2 cup sugar/jaggery
  • 1/4 cup khoya
  • 2 ripe bananas
  • 1/2 tsp black pepper
  • Chopped fruits (apples, oranges, pomegranates, grapes, etc.)
  • 1 cup chenna
  • 1/2 teaspoon cardamom powder
  • Salt
  • Chopped nuts (for garnish)

How to Make Makara Chaula

Take raw rice and rinse it thoroughly. Soak it for 3-4 hours or overnight. Then spread it on a plate and dry it for 3-4 hours at room temperature.

Now put the dried rice in a grinder along with grated coconut, khoya, sugar, and milk. Blend it into a smooth paste and transfer the ingredients to a big bowl.

After transferring it into a bowl, add chenna, cardamom powder, black pepper powder, and chopped fruits – apples, oranges, pomegranates, grapes, or any other of your choice. Mix everything well.

Now peel and crush the banana in the rice mixture. Mix well so that all the ingredients are combined well.

Garnish it with chopped nuts and fruits, and voila! Your makara chaula is ready to serve!
