Ingredients of Mix Vegetables and Cheese Skewers

  • For skewers:
  • 5 Garlic cloves
  • 1/2 tsp cumin
  • Pepper corns
  • 250 gms paneer
  • 1 Cucumber
  • Skewers sticks
  • 1 Lemon (squeezed)
  • 10 Green olives
  • 1/2 tsp chilli flakes
  • 1/2 tsp black pepper
  • Handful of basil leaves
  • 1 tbsp red wine vinegar
  • 1/2 zucchini, chopped
  • 1 Red bell pepper
  • 1 onion (cut)
  • 3 tbsp extra virgin olive oil
  • For hung curd dip:
  • 600 ml hung curd
  • 2 tbsp extra virgin olive oil
  • 1 tsp chilli powder
  • 1/2 tsp black pepper
  • 1 Lemon (squeezed)
  • Salt (to flavor)
  • Handful of dill leaves, chopped
  • Handful of coriander leaves, finely chopped
  • 1 tbsp honey
  • 1 cucumber (de-seeded), finely chopped

How to Make Mix Vegetables and Cheese Skewers

Prepare the marinade:

In the grinder add garlic, green olives, chilli flakes, cumin, black pepper, few sprigs of basil leaves and salt. Grind it all together.

Add olive oil, red wine vinegar, and lemon juice, then mix it with the paste.
3.
Thread onion, paneer, red bell pepper, zucchini and onion on the skewers sticks.
4.
Massage marinate into the skewers.
5.
Pre heat the grill pan and drizzle it with olive oil.
6.
Gently lower the skewers into the pan and grill it.

Prepare hung curd dip:

1.
In a bowl, add hung curd, olive oil, chilli powder, black pepper, lemon juice, salt, dill leaves, coriander leaves, honey and cucumber.
2.
Mix it well and serve it with the skewers.
