Ingredients of Poached Salmon With Shrimp Mayonnaise
- 1 salmon (whole and cleaned)
- 250 ml fish stock/wine
- 1 lemon
- 1/2 kg cooked prawns
- 2 sliced cucumbers
- 1/2 kg tomatoes
- For tomato filling:
- 150 gm hung yoghurt
- 2 tsp cheese spread
- 2 tsp chopped herbs
- 1/4 tsp garlic paste
- Salt and pepper to taste
- Shrimp mayonnaise:
- 125 ml mayonnaise
- 100 gm cooked shrimps
- 1 Tbsp reduced fish stock
- 1/2 tsp paprika
- 1 Tbsp cream
- Salt and pepper to taste
How to Make Poached Salmon With Shrimp Mayonnaise

Arrange the fish in a tin. Pour the stock and add lemons.

Cover the fish with foil and poach at 170 degrees Celsius for 35-40 minutes.
For the stuffed tomatoes:

Combine all the ingredients and stuff them into the tomatoes.

Arrange the fish on a cool platter. Plate it up with the cooked prawns, cucumber and tomatoes.
3.
Combine ingredients for the shrimp mayonnaise and serve with the fish.
