Ingredients of Rajasthani Makki Dhokla
- 2 Cups maize flour (makki aata)
- 2 Green chillies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds (crushed)
- 1 tsp fennel seeds
- 1 tsp ginger, grated
- 1 tsp garlic, grated
- 3-4 Black peppercorns (crushed)
- 1/2 tsp baking soda
- 2 tbsp coriander leaves, chopped
- to taste salt
- to taste red chilli powder
How to Make Rajasthani Makki Dhokla

In a bowl, combine maize flour, salt, red chilli powder, chopped green chilies, cumin seeds, coriander powder, fennel seeds, ginger, garlic, peppercorns, baking soda and coriander leaves. Mix well.

Add water and knead soft dough with the mixture. Let it rest for some time.

Divide the dough into equal parts and make round tikkis from each part. Flatten dough in between the palms and dig in your thumb in the centre to make a crest.

Grease an idli steamer and place all the round mixtures. Let it steam for around 20 minutes. Follow the same process of steaming idli or regular dhokla.

When steamed, drizzle some ghee over it or a tempering of your choice. Serve hot.
