Ingredients of Khaman Dhokla

  • 1 Cup Besan (Gam flour)
  • 1/2 cup Yogurt (adjust as needed)
  • 1 tbsp Lemon juice
  • 1 tsp Ginger paste
  • 300 ml Fresh spinach juice
  • 1 gram Saffron
  • 1-2 Finely chopped green chilies (optional)
  • 1 tsp Baking Soda
  • 1 tsp Eno
  • to taste Salt
  • For Tempering:
  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Sesame seeds
  • 1-2 Slit green chilies
  • Curry leaves (optional)
  • Fresh chopped coriander leaves (for garnish)
  • Grated coconut (for garnish, optional)

How to Make Khaman Dhokla

Prepare the batter:

1.
In a large bowl, combine besan, yogurt, water, lemon juice, ginger paste, green chilies (if using), and salt.

Whisk the mixture until smooth and lump-free.
3.
Divide the batter into three parts: one plain, one with spinach juice blended in, and one with saffron mixed in.
4.
Let the batter rest for 15 minutes.

Prepare for steaming:

1.
Stir baking soda and Eno fruit salt (or baking powder) into the batter. The batter will become frothy.

Steam the Dhokla:

1.
Grease a steaming tray or a round cake pan.
2.
Pour the batter into the prepared tray.
3.
Steam over medium heat for 15-20 minutes or until a toothpick inserted into the centre comes out clean.

Prepare for tempering:

1.
Heat oil in a small pan.
2.
Add mustard seeds and let them splutter.
3.
Then add sesame seeds, slit green chilies, and curry leaves (if using).

Serve:

1.
Cut the steamed dhokla into squares.
2.
Pour the tempering over the dhokla.
3.
Garnish with chopped coriander leaves and grated coconut (if desired).
4.
Serve warm with green chutney or tamarind chutney.
