Ingredients of Rajasthani Makki Dhokla

  • 2 Cups maize flour (makki aata)
  • 2 Green chillies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds (crushed)
  • 1 tsp fennel seeds
  • 1 tsp ginger, grated
  • 1 tsp garlic, grated
  • 3-4 Black peppercorns (crushed)
  • 1/2 tsp baking soda
  • 2 tbsp coriander leaves, chopped
  • to taste salt
  • to taste red chilli powder

How to Make Rajasthani Makki Dhokla

  • 1.In a bowl, combine maize flour, salt, red chilli powder, chopped green chilies, cumin seeds, coriander powder, fennel seeds, ginger, garlic, peppercorns, baking soda and coriander leaves. Mix well.
  • 2.Add water and knead soft dough with the mixture. Let it rest for some time.
  • 3.Divide the dough into equal parts and make round tikkis from each part. Flatten dough in between the palms and dig in your thumb in the centre to make a crest.
  • 4.Grease an idli steamer and place all the round mixtures. Let it steam for around 20 minutes. Follow the same process of steaming idli or regular dhokla.
  • 5.When steamed, drizzle some ghee over it or a tempering of your choice. Serve hot.
