Ingredients of Aubergine in Tomato Sauce
- 4 long aubergine or eggplant
- 7 medium tomatoes-skinned and diced
- 2 Tbsp tomato paste
- 8 large mild green chillies
- 6 cloves garlic-chopped fine
- 4 cups water salt to taste
How to Make Aubergine in Tomato Sauce
1.
Sparingly peel the aubergine. Dice and put into water immediately.

Heat oil in a thick-bottomed pan and deep fry the aubergine.

Drain excess oil and keep aside.

For the tomato sauce take very little oil in a pan and heat it.

Add tomatoes, green chillies, garlic and salt. Cook for 5 minutes.

Now, add two Tbsp of tomato paste and some water.
7.
Cook over a slow fire and reduce to a thick gravy.
8.
Add the deep fried aubergine.
9.
Serve hot with any kind of bread.
