Ingredients of Grilled Surmai Steak
- 500 gms firm fleshed fish cut into 1 inch cubes
- For the marinade:
- 2 tsp ginger garlic paste
- Green chillies
- Dill Leaves
- Fresh coriander
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- 1 tsp fennel powder
- 1 tsp tamarind extract
- Sea Salt
- 1 cup refined oil
- baby potatoes
- For the tempering :
- 2 tbsp oil
- 1 tsp onion seeds
- 1 tsp black mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel powder
- 1 tsp fenugreek seeds
- 2-3 dry red chilli
- Black salt
How to Make Grilled Surmai Steak

In a a mortar and pestle, put green chillies, few dill leaves, red chilly powder, turmeric powder, coriander powder and ginger and garlic paste together till it is almost fine in texture.

Add the other spices, salt, and fresh coriander leaves and pound. Check for balance of flavors and keep this marinade aside

In another pan boil the potatoes and cut them into halves.

Add a tsp of the marinade paste on the fish and put them one top of the other.

Grill on a medium hot grill till the fish easily flakes with a fork, basting with a little oil and butter mixture to keep the moist

In another pan, dry roast the cumin seeds, baby potatoes, salt, coriander seeds, 1 tsp of oil, 2 tsp of tamarind extract. Toss with a little of the marinade.

In a pan, heat 2 tbsp of oil. Add onion seeds, black mustard oil, cumin seeds, fennel powder, fenugreek seeds, dry red chillies and black salt.

Pout this tempering over the fish and serve hot.
