Mansa Poorga is a dish originally from Orissa. It is a type mutton curry, mingled in freshly prepared garam masala, served with rice or parantha.

Ingredients of Mansa Poorga
- 1/ kg mutton chunks, boneless
- 1 onion, julienne
- 1 tomato, julienne
- 1 tomato, carved, for garnishing
- A small bunch of chopped coriander leaves for garnishing
- For Marination:
- 3 Tbsp curd, beaten
- 1 Tbsp ginger paste
- 1 Tbsp garlic paste
- 1 tsp black pepper powder
- 1 tsp haldi
- 2 tsp salt
- For Garam Masala:
- 4-5 cloves / laung
- 1 kali elaichi/ black cardamom
- 1/2 stick cinnamon
- 3 green cardamom
- 4-5 black peppercorns
- A little bit of mace
How to Make Mansa Poorga

Wash the boneless pieces of mutton. Drain it nicely. Marinate it (see ingredient list for the marinade) and mix it nicely. Cover it with a cling film and store in the fridge for an hour.

Take all the garam masala ingredients in a mortar and bash it. Don't grind it, keep it more or less whole.

In a pan take a tablespoon of mustard oil. When heated add the garam masala.

Add onions and saute. Once transparent, add julienned tomatoes. Let it cook for 2-3 minutes and then add the marinated mutton into the pan.

Add the mutton divided into 3 batches at a time so that the meat cooks properly and the amount of water released is not too much.

Cover the pan and cook the mutton till soft.
7.
Transfer it into a bowl and garnish with tomatoes and coriander leaves.
