Ingredients of Mixed Rice
- 100 gm minced pork 100 gm shredded chicken 1/2 tsp dried thyme 1/2 tsp dried oregano 1 tsp black pepper 1 tsp paprika 1 tsp mustard powder 4 tbsp oil 3 sliced leeks 4 tbsp chopped celery 1 sliced green pepper 1 sliced red pepper 2 tsp chopped garlic 125 gm rice 1/2 tsp soaked saffron strands 350 ml chicken stock 4 tomatoes - peeled and chopped 250 gm fish fillets - cut into 2" pieces 12 shelled prawns 4 tbsp peas 2 tbsp chopped coriander
How to Make Mixed Rice

Combine the chicken and pork with the thyme, oregano, pepper, paprika and mustard powder. Cook for 3 minutes and add leeks, garlic, celery and bell peppers. Cook for 5 minutes. Stir in rice.

After 2 minutes, add saffron, stock and tomatoes. Season. Bring to a simmer.

Add prawns, fish and peas. Cover tightly. Cook on a slow flame until rice is soft.

Garnish with coriander and serve hot.
