1.Combine the chicken and pork with the thyme, oregano, pepper, paprika and mustard powder. Cook for 3 minutes and add leeks, garlic, celery and bell peppers. Cook for 5 minutes. Stir in rice. After 2 minutes, add saffron, stock and tomatoes. Season. Bring to a simmer. Add prawns, fish and peas. Cover tightly. Cook on a slow flame until rice is soft. Garnish with coriander and serve hot.
