Ingredients of Saffron And Honey Rabri Parfait
- For Rabari:
- 1 liter full-fat milk
- 1-2 tbsp Organic Indi Honey (to taste)
- For Homemade Granola:
- 2 cups muesli dry fruit mix (includes rolled oats, assorted nuts, dried fruits)
- 1/4 cup Organic India Honey (or as per taste)
- 2 tbsp melted butter or coconut oil (optional, for richness)
How to Make Saffron And Honey Rabri Parfait
For Rabri:
1.
In a wide, heavy-bottomed pan, bring the milk to a boil.

Reduce heat and simmer, stirring frequently and scraping the sides of the pan, until the milk reduces to one-third its original volume and becomes thick and creamy (approx. 45–60 minutes).

Remove from heat.
4.
Stir in OI honey to sweeten.
5.
Let rabari cool to room temperature.
For Homemade Granola:
1.
In a large mixing bowl, add the muesli dry fruit mix.
2.
Pour the honey and Oil/Butter over the muesli.
3.
Stir well until all ingredients are evenly coated.
4.
Line a baking tray with parchment paper.
5.
Spread the granola mixture in an even layer.
6.
Bake for 20–25 minutes, stirring once halfway through to ensure even toasting at 160C.
Assemble
1.
In glasses or dessert bowls, layer thick yoghurt at the bottom then rabari.
2.
Add a layer of honey-coated dry fruit mix granola.
3.
Repeat with another layer of rabari.
4.
Garnish with saffron strands.
