Make these delicious tricolour muffins to celebrate the occasion of Republic Day. You can decorate these muffins by adding a tricolour whipped cream in layers.

Ingredients of Tricolour Muffins
- 8 Eggs
- 425 gms Castor sugar
- 475 gms Refined flour
- 150 gms Almond powder
- 230 gms Cream
- 25 ml Vanilla essence
- 230 gms Yogurt
- 10 gms Baking powder
- 10 gms Baking soda
- 500 ml Oil
- 5 ml Light green edible color
- 5 ml Edible saffron colour
How to Make Tricolour Muffins

Preheat the oven at 180 degree C. Line up the muffin molds and keep them ready.

Take a large mixing bowl and break the whole eggs in it. Add castor sugar and vanilla essence. Mix well with a whisk until the mixture gets creamy and the sugar is completely dissolved.

Then add cream and yogurt to the mixture. Mix it well until smooth consistency. Add the refined flour, almond flour, baking powder and baking soda.

With a spatula mix these dry ingredients well in the mixture.Make sure there are no lumps found. Once the mixture is smooth, lastly add the oil and mix it slowly again until a smooth consistency. This makes the batter.

Now divide the batter into three parts in three bowls equally.In one part add the edible green color and mix well.

Same way, in the other part mix the saffron color and mix well. The third part will remain as it is. Now line up the muffin cups.

In a sequence, in each muffin cup, first add the green batter as base, then the plain batter and top with the saffron colored batter.

Once all the cups are filled, put them for baking at the set temperature of 180 degree C for 15 to 18 mins. In between just to check the doneness of the muffin, you can put a toothpick and if it comes out clean, then the muffin is ready.

You can decorate the muffin by adding a tricolor whipped cream in layers.
