Ingredients of Vegetable poha

  • 1 Cup poha
  • 1/2 cup mixed veg (beans, carrot, capsicum and peas), finely chopped
  • 1 Onion, finely chopped
  • 1 green chilli, finely chopped
  • 2 springs curry leaves
  • 1 tsp coriander leaves , finely chopped
  • 1/2 tsp mustard seeds
  • A pinch of haldi
  • 1 whole red chilli
  • to taste Salt and sugar
  • Lemon juice, as per taste
  • Sev, to garnish
  • Oil
  • Fresh ground coconut or desiccated coconut, to garnish (optional)

How to Make Vegetable poha

1.
Add oil in a pan and to it, add whole red chilli and mustard seeds.

When it splutters, add curry leaves, onion and green chilli. Fry until onion turns translucent.

Add mixed vegetables and cook until it turns soft. Add some salt while cooking.
4.
Rinse poha and add to it.
5.
Add some more salt, sugar and turmeric and cook everything well.
6.
Add the coconut and mix.
7.
Finally, lower the flame and add lemon juice and mix.
8.
Garnish with sev and coriander leaves and serve.
