Ingredients of Badam Lauki Ki Launj

  • 3/4 Cups Almonds
  • 1/4 cup Toasted Almond Flakes
  • 3 cup (water removed) Grated Bottle Gourd (Lauki)
  • 1/2 cup Full Fat Milk
  • 1 cup Grated Khoya
  • 2 tbsp Ghee
  • 1/2 cup Sugar
  • 1 tsp Cardamom Powder

How to Make Badam Lauki Ki Launj

Boil almonds in water for 5-7 minutes then peel and ground with milk into thick and fine paste.

In a pan, heat ghee and add lauki and cook on low heat.

Keep sautéing and keep stirring occasionally. Cook till it is soft and there is no moisture left.

Stir in the almonds paste and cook for a minute. Now, add khoya and cook further for 2-3 minutes. Stir continuously to avoid mixture from sticking the in bottom of the pan.

Now add sugar and green cardamom powder. Mix well, and as sugar gets heated up, it will melt and the mixture becomes thin and runny.

Keep stirring and cook until mixture reduces and release ghee on the sides of the pan.

Now turn off the stove. Add half of the almond flakes and mix again.
8.
In a greased tray, evenly spread the burfi mix and sprinkle remaining almond flakes and allow it to set until firm for 2-3 hours.
9.
Using tip of a sharp knife, slice the burfi and serve.
