Ingredients of Broccoli, Mint And Pea Soup

  • 40 g Butter
  • 10 g Garlic
  • 30 g Onion
  • 140 g Broccoli (about 1/2 of a decent sized one)
  • 80 g Fresh peas
  • 6 g Mint (about 2 sprigs)
  • 200 ml Vegetable stock

How to Make Broccoli, Mint And Pea Soup

Heat the butter in a saucepan and add finely chopped garlic, cook till brown.

Add sliced onion to it, cook till they get translucent.

Add blanched florets of broccoli and peas along with the vegetable stock to it and simmer till till the broccoli starts softening.

Cool it, and then blend it in a blender with mint leaves.

Strain the mixture, add salt and pepper to taste, re-heat for 2-3 minutes.
6.
Garnish with a fire roasted floret of broccoli or sprig of mint and serve piping hot!
