Ingredients of Ragi Soup

  • 1 cup ragi flour (finger millet)
  • 1 onion, finely chopped
  • ½ cup carrots, finely diced
  • ½ cup spinach, chopped
  • ½ cup beans, finely chopped
  • ½ cup peas
  • ½ grated cabbage
  • ½ cup sweet corn
  • 1-inch ginger, grated
  • 2 cloves garlic, minced
  • 4 cups water
  • 2 tablespoons lemon juice
  • Oil/ghee
  • Salt (as per taste levels)
  • Crushed black pepper (as per taste levels)
  • Coriander leaves, chopped (for garnish)

How to Make Ragi Soup

Take a large pot and heat some oil/ghee in it. Now add grated ginger and chopped garlic in it and stir till they lose their rawness.

Now add the chopped vegetables in the pot – onions, peas, carrots, spinach, beans, cabbage, and sweet corn, and stir fry for 5 minutes. Make sure not to overcook them.

After the vegetables are stir-fried, add 4 cups of water to the pot. Mix all the ingredients well and season it with salt and pepper.

In the meantime, take ragi flour in a small bowl and add water to it. Make a ragi flour slurry of it but be mindful of the water quantity being put it in.

Bring the pot ingredients to a near boil before adding the ragi slurry it. Mix well so that all the ingredients are well combined. Boil all the ingredients for 4-5 minutes until the ragi is cooked.
6.
Turn off the flame and add a dash of lemon juice to the soup. Garnish with chopped coriander leaves and voila! Your weight loss ragi soup is ready to serve!
