Ingredients of Pho Soup
- Broth:
- 10 cups vegetable stock
- 1 onion, peeled and halved
- 1/4 cup soy sauce
- 8 cloves garlic, coarsely chopped
- 2 cinnamon sticks (3-inch)
- 2 tbsp ground ginger
- 2 star anise pods

- Soup:
- 16 oz thin rice noodles
- 2 tbsp vegetable oil
- 2 (14 oz) firm tofu blocks, drained and sliced into ¼-inch pieces
- 8 oz enoki mushrooms
- 4 scallions, sliced
- 1/2 cup cilantro
- 1 lime, cut into wedges
- ¼ cup mung bean sprouts
- ¼ cup Thai basil leaves, torn

Prepare Broth: Combine stock, onion, soy sauce, garlic, cinnamon, ginger, star anise, and bay leaves in a pot. Bring to a boil, then reduce heat, cover, and simmer for 30-45 minutes. Strain and keep hot.

Prepare Noodles: Soak noodles in boiling water for 8-10 minutes until soft. Drain and rinse.

Cook Tofu: Heat oil in a skillet over medium-high heat. Fry tofu slices until golden, about 6 minutes per side.

Assemble Soup: Add fried tofu and mushrooms to the hot broth to warm, then divide among bowls with noodles. Top with scallions and cilantro.

Serve Garnishes: Provide lime wedges, bean sprouts, and basil for customizing each bowl.
