Ingredients of Pho Soup

  • Broth:
  • 10 cups vegetable stock
  • 1 onion, peeled and halved
  • 1/4 cup soy sauce
  • 8 cloves garlic, coarsely chopped
  • 2 cinnamon sticks (3-inch)
  • 2 tbsp ground ginger
  • 2 star anise pods
  • bay leaves
  • Soup:
  • 16 oz thin rice noodles
  • 2 tbsp vegetable oil
  • 2 (14 oz) firm tofu blocks, drained and sliced into ¼-inch pieces
  • 8 oz enoki mushrooms
  • 4 scallions, sliced
  • 1/2 cup cilantro
  • 1 lime, cut into wedges
  • ¼ cup mung bean sprouts
  • ¼ cup Thai basil leaves, torn

How to Make Pho Soup

Prepare Broth: Combine stock, onion, soy sauce, garlic, cinnamon, ginger, star anise, and bay leaves in a pot. Bring to a boil, then reduce heat, cover, and simmer for 30-45 minutes. Strain and keep hot.

Prepare Noodles: Soak noodles in boiling water for 8-10 minutes until soft. Drain and rinse.

Cook Tofu: Heat oil in a skillet over medium-high heat. Fry tofu slices until golden, about 6 minutes per side.

Assemble Soup: Add fried tofu and mushrooms to the hot broth to warm, then divide among bowls with noodles. Top with scallions and cilantro.
5.
Serve Garnishes: Provide lime wedges, bean sprouts, and basil for customizing each bowl.
