Instead, make your own dish in your kitchen's comfort with simple ingredients. This achaari aloo tikka recipe is super easy and you can make it with this simple recipe given to us by Masterchef Pankaj Bhadouria. Ingredients for achaari aloo tikka

Parboiled potatoes

1/2 cup thick yoghurt

1/2 tsp Kashmiri red chilli powder

1 tsp finely chopped green chilli

1 tsp Kasuri methi

1/2 tsp black pepper powder

1/2 tsp garam masala powder

1 tsp salt

2 tbsp mustard oil

1/2 lemon

1 tsp finely chopped coriander leaves

Onion

Tomato

Capsicum

Mustard oil

Silver foil

For achaari masala

1 tbsp coriander seeds

1 tbsp fennel

1/2 tsp Fenugreek seeds

1/2 tsp kalonji

1/2 tsp cumin seeds

Method:

Step 1: Peel the par boiled potatoes. Prick them with a fork.

Step 2: In a mixing bowl, mix all the ingredients. 

Step 3: Take a pan and add the achaari masalas to it.

Step 4: Roast the spices till they are fragrant.

Step 5: Grind the spices into a powder.

Step 6: Add a pinch of kalonji to it.

Step 7: Add 1 tbsp achaari masala on tikka mix.

Step 8: Squeeze half a lemon and add finely chopped coriander leaves to it.

Step 9: Add the par boiled potatoes. Make sure they are coated well with the mixture.

Step 10: Toss the potatoes lightly.

Step 11: Add diced vegetables to the mixture.

Step 12: Fire a lump of coal.

Step 13: In the aloo mix, place a cup made of silver foil. Place the burning coal in the cup.

Step 14: Add 1 tsp mustard oil

Step 15: Cover the mixing bowl with silver foil for 10 minutes

Step 16: Soak bamboo sticks that are to be used as skewers.

Step 17: Take out the silver foil from the top of the mixing bowl.

Step 18: Take out the coal.

Step 19: Arrange vegetables on a skewer. 

Step 20: Grill on an open flame.

Step 21: Baste with oil.

Step 22: Serve hot with sauce and dips.
