Cucumber Idli is an instant breakfast popular in the Karnataka and Konkani region of the country. It is a different variation of breakfast that you should definitely try; it does not require fermentation, soaking, or any of that lengthy process.

Ingredients of Cucumber Idli
- 1 Cup Grated cucumber
- 1 cups Suji/rava/dosa rice powder
- 1/2 cup Chopped coriander
- 2 Chopped Chillies
- 1/4 cup Grated coconut
- Salt to taste
How to Make Cucumber Idli

In a bowl grate the cucumber and squeeze out all the water and save some of it.

Now in another bowl, add the grated cucumber, suji, chopped coriander, chili, coconut and salt and mix well.

You may also add a tadka of mustard seeds and curry leaves at this point but that is totally optional.

Now add the little bit of cucumber juice you had saved and plain water to achieve the Idli batter consistency.

The batter should not be too watery since the cucumber will leave some more water later.

Now place your steamer on the gas, add the cucumber batter to the idli tray, and let it steam for 20 minutes or so.

Remove from heat and serve hot.
