Ingredients of Fruit Marshmallow
- 300 gms caster sugar
- 70 gms raspberry puree - 1
- 105 gms invert sugar
- 28 gms gelatin sheet
- Additional ingredients:
- 70 gms raspberry puree - 2
- 105 gms invert sugar
- For dusting mixture:
- 20 gms corn flour
- 80 gms icing sugar
How to Make Fruit Marshmallow

Heat first raspberry puree with invert sugar and common sugar in a small stewing pan to 106ºC.

At this time warm the second part of the invert sugar and puree. Pour into a stand mixer and start whisking.

Soak gelatin sheet in a cold water, squeeze out the excess water. Add it to the first fruit-sugar syrup and whisk until dissolved.

Pour this syrup into the same stand mixer and continue whisking until mass reaches stiff peaks.

Pour into a square mould, dusted with the corn flour icing sugar mix.

Let it set at room temperature.

Cut into cubes and toss in the icing sugar and cornflour mix.
