Ingredients of Fruit Marshmallow

  • 300 gms caster sugar
  • 70 gms raspberry puree - 1
  • 105 gms invert sugar
  • 28 gms gelatin sheet
  • Additional ingredients:
  • 70 gms raspberry puree - 2
  • 105 gms invert sugar
  • For dusting mixture:
  • 20 gms corn flour
  • 80 gms icing sugar

How to Make Fruit Marshmallow

  • 1.Heat first raspberry puree with invert sugar and common sugar in a small stewing pan to 106ºC.
  • 2.At this time warm the second part of the invert sugar and puree. Pour into a stand mixer and start whisking.
  • 3.Soak gelatin sheet in a cold water, squeeze out the excess water. Add it to the first fruit-sugar syrup and whisk until dissolved.
  • 4.Pour this syrup into the same stand mixer and continue whisking until mass reaches stiff peaks.
  • 5.Pour into a square mould, dusted with the corn flour icing sugar mix.
  • 6.Let it set at room temperature.
  • 7.Cut into cubes and toss in the icing sugar and cornflour mix.
