Ingredients of Fruit Marshmallow
300 gms caster sugar
70 gms raspberry puree - 1
105 gms invert sugar
28 gms gelatin sheet
Additional ingredients:
70 gms raspberry puree - 2
105 gms invert sugar
For dusting mixture:
20 gms corn flour
80 gms icing sugar
How to Make Fruit Marshmallow
1.Heat first raspberry puree with invert sugar and common sugar in a small stewing pan to 106ºC.
2.At this time warm the second part of the invert sugar and puree. Pour into a stand mixer and start whisking.
3.Soak gelatin sheet in a cold water, squeeze out the excess water. Add it to the first fruit-sugar syrup and whisk until dissolved.
4.Pour this syrup into the same stand mixer and continue whisking until mass reaches stiff peaks.
5.Pour into a square mould, dusted with the corn flour icing sugar mix.
6.Let it set at room temperature.
7.Cut into cubes and toss in the icing sugar and cornflour mix.
