Cauliflower cooked with a deep and thick gravy in a microwave

Ingredients of Gobhi Mussallam

  • 1 Cauliflower
  • 1 Tbsp Lemon juice
  • 2 Tbsp Water
  • 1 1/2 tsp Salt
  • 1 Tbsp Oil
  • 1/2 Cup Onions, finely chopped
  • 1/2 Cup Onion, grated
  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 1 tsp Coriander powder
  • 1 tsp Cumin seed powder
  • 1 tsp Kashmiri chilli powder
  • 1 tsp Turmeric powder
  • 1/2 Cup Tomatoes (blanched and peeled), finely chopped
  • 1 Cup Tomatoes (strained)
  • 1 tsp Salt
  • For garnish:
  • Cardamom powder
  • Garam masala

How to Make Gobhi Mussallam

1.
Mix together the water, lemon juice and the salt.

Cut off the stem of the cauliflower right till the base. Prick with a sharp knife all over.

Place the cauliflower in a deep dish and sprinkle with the lemon juice mixture all over and around it.

Cover and cook at HI for 12-15 minutes, till almost cooked, but firm. If not, cook further till done. Remove from the dish and keep aside.

Place oil in a dish and cook uncovered at HI for 1 minute.

Add the onions and cook uncovered at HI for 5 minutes, stirring once, to a light brown.

Add the grated onions, mix well and cook uncovered at HI for 5 minutes, stirring once.

Add the ginger and the garlic paste and cook uncovered at HI for 1 minute.
9.
Add the coriander, cumin, chilli powder, turmeric and the tomatoes.
10.
Cook covered at HI for 5 minutes.
11.
Add to this the blended tomato and cook covered at 70% for 5 minutes.
12.
Add salt to this gravy.
13.
Place the cauliflower upside-down in the dish and cover with the gravy.
14.
Cook covered at 70% for 5 minutes.
15.
Turn and cook covered at 70% for 5 minutes, basting it with the masala.
16.
Serve hot garnished with cardamom powder and the garam masala.
