Ingredients of Kashmiri Trout Roulade

  • 500 gm kashmiri trout filet 50 gm black olive paste 200 gm cooked cannellini beans 1 cooked potato 50 gm chopped onion 200 ml virgin olive oil 200 gm tomatoes, cubed 5 gm capers 10 ml lemon juice

How to Make Kashmiri Trout Roulade

Cook the chopped onions with olive oil and the cannellini beans and the potatoes. Cook with little water until they can be mashed. Season with salt and freshly ground pepper. Cut the trout filet into strips and roll them. Add the black olive paste and season. Season the cubed tomatoes with parsley, capers and lemon juice. Set aside. Pan fry the trout roulade in olive oil and cook in the oven to finish. Serve with the mashed vegetables, tomato salsa and garnish with fresh parsley.
