Ingredients of Spaghetti With Lamb Meatballs In Tomato Sauce

  • 500 gm spaghetti
  • For the meat balls:
  • 500 gm minced lamb
  • 1 onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1/2 tsp dried thyme
  • 100 gm chopped parsley
  • 100 gm grated Parmesan cheese
  • Pinch of ground nutmeg
  • 2 slices white bread soaked in a little milk
  • 1 egg, beaten
  • Salt and Pepper
  • 2-3 Tbsp olive oil for frying
  • For the tomato sauce:
  • 2 Tbsp olive oil
  • 1 large tin of tomatoes
  • 1 Tbsp tomato puree
  • 1 onion, chopped
  • 1 clove crushed garlic
  • Thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 pint of Stock or water
  • 1 Tbsp olive oil

How to Make Spaghetti With Lamb Meatballs In Tomato Sauce

Cook the spaghetti according to the instructions on the packet.

Prepare the meat balls:

Heat a saucepan and add the onion and garlic. Fry for 2 minutes. Place in a bowl.

Squeeze the bread dry and crush it up and add to the bowl of onion and garlic.

Add the mince and mix thoroughly. Wet your hands slightly and shape the mixture into golf balls.

Heat a frying pan and add the oil and gently shallow fry the meatballs. Brown on all sides and set aside.

Prepare the tomato sauce:

Heat the oil in a saucepan and fry the onion for 4-5 minutes. Mix in the garlic and fry for a minute. Add the tomatoes, puree, thyme, bay leaf and salt and pepper to taste

Simmer for 35 minutes. Then when the sauce has cooled down, place in a blender and whiz till the consistency of the sauce is smooth. Mix in the stock
3.
Then add the meat balls and simmer for 25-30 minutes.
4.
Serve with the spaghetti and the grated Parmesan.
