A delicate mousse to grace your dinner party! Made with tuna, mayo, herbs, cream and served with a refreshing cucumber sauce.

Ingredients of Tuna Mousse
- 3 tsp gelatine
- 2 Tbsp lemon juice
- 3 Tbsp water
- 1 cucumber - peeled, seeded and chopped
- 2 tins of tuna fish
- 125 ml mayonnaise
- 125 ml whipped cream
- 2 Tbsp chopped dill/ parsley
- 4 oranges - segmented
- Salt and pepper
- Cucumber sauce:
- 1 cucumber - peeled and grated
- 1/2 tsp salt
- 1 tsp vinegar
- 1 tsp sugar
- A pinch of paprika
- 150 ml thick yogurt
How to Make Tuna Mousse
1.
Lightly oil a 1/2 kg loaf tin.

Sprinkle gelatine over lemon juice and water in a pan. Dissolve over a gentle flame.

Combine cucumber, fish, mayonnaise, cream, herbs and gelatine.

Season well. Arrange 1/2 in the tin. Scatter orange segments.
5.
Cover with remaining mousse. Chill until set. Serve sliced with sauce.
For the sauce:
1.
Mix cucumber, salt, vinegar and sugar together. Leave for 1 hour.

Drain and reserve 1 Tbsp of the liquid. Combine cucumber, reserved liquid, paprika and curd.
3.
Season and serve with the mousse.
