Ingredients of Turkish Scrambled Eggs (Menemen)
- 2 eggs
- 1 onion, finely chopped
- 1 tomato
- tomato, pureed
- ½ green bell pepper, finely chopped
- 1 tsp chilli flakes
- 1 tsp oregano
- ½ tsp pepper
- Salt to taste
- 2 tbsp olive oil
- 1 tsp parsley (for garnish)
How to Make Turkish Scrambled Eggs (Menemen)

In a bowl, beat the eggs with a little salt and pepper. Set aside.

In a saucepan, heat oil and add chopped onions along with green chillies. Saute for 2 minutes.

Next, add both tomatoes (pureed and chopped) and mix.

Add chilli flakes, oregano, salt and bell pepper. Saute until the tomato begins to soften.

Finally, add the beaten eggs to the saucepan. Spread it around the mixture and scramble it lightly for 2-3 minutes.

Garnish with parsley and/or other herbs of choice. Serve the menemen hot with some bread.
