Here we bring you a recipe of a much-loved north Indian dish that we have always relished in our favourite dhabas and restaurants. You may also call it subz handi or simply veg handi.

Ingredients of Veg Diwani Handi
- 2 Onions, roughly chopped
- 2 Tomatoes, roughly chopped
- 1 Carrot
- 1/2 cup Peas
- 1 Capsicum
- 1/2 cup Beans
- 1/2 cup Cottage Cheese
- 10 Cashew Nuts
- Salt to taste
- Red chilli powder to taste
- 1/2 tsp Turmeric powder
- 1 tsp Ginger
- 1 tsp Garlic
- 2 Bay leaves
- 1/2 tsp Cumin Seeds
- 1/2 tbsp Garam Masala
- 1 tsp Coriander Powder
- 1/4 cup Cream
How to Make Veg Diwani Handi

Chop all the veggies and boil them al-dente.

Saute onions till brown. Strain and keep aside.

Saute tomatoes, cashews, ginger and garlic. Blend along with onions to make paste.

Heat oil in the pan, roast green chilli and cumin seeds.
5.
Cook the onion-tomato-cashew paste.
6.
Add salt and spices. Mix well.
7.
Add veggies and simmer till the veggies are fully cooked.
8.
Add cream, bring to boil. Serve hot.
