Pani Pakoda Recipe: How To Make Pani Phulke Pakoda At Home

For the pani of the pani pakoda, take water in a bowl, it can be cold or room temperature. Add green chutney, imli water, salt, black salt, cumin powder, chaat masala, hing, red chilli powder, red chilli flakes, chopped mint leaves, chopped coriander leaves, lemon juice and sugar. Mix this well and your chatpata pani is ready.

Now for the light and spongy pakodas - In a bowl, add besan, red chilli powder, turmeric powder and water. Whisk this batter till it is thick and smooth, let it rest. Heat oil in a kadhai. Whisk the batter smooth one more time, add tiny dollops of the batter in the hot oil. These dollops shall inflate in size while frying. Remove them once they are light golden.

Next, dip the pakodas in cold water for 30-40 seconds, and squeeze them lightly while removing. This step makes the pakoda spongier and absorbent. Place the pakodas in the chatpata pani and the dish is ready.
