Dahi puri includes a puri shell that is stuffed with potatoes, masala, onions (optional), and a variety of chutneys. The street snack is finished off with beaten yoghurt, crunchy sev (crispy strands of flour), and fresh coriander leaves.

Next in line is Madhya Pradesh's sev. This noodle-like Indian snack is a savoury indulgence that is every bit crispy. The word sev is derived from siv, which means sewing, referring to the snack's thread-like appearance. Prepared with gram flour, it is seasoned with spices such as ajwain and turmeric prior to being deep fried.

Gujarat's dabeli is on the third spot. Toasted ladi pav buns are stuffed with a mashed potato filling seasoned with a spice mix of coriander, turmeric, cardamom, fennel seeds, pepper and other spices. Dabeli is topped off with roasted peanuts, pomegranate seeds, and some sev.
