Anda Malai is made with a rich white gravy consisting of onion paste, cream, milk and masalas. Drop the boiled eggs in this creamy sauce and let it soak all the flavours.

Ingredients of Anda Malai

  • 4 Boiled eggs
  • 1/2 cup Onion
  • 1/2 tbsp Chilli paste
  • 2 tbsp Ginger garlic paste
  • 200 mililitres Milk
  • 2 tbsp Cream
  • 1/2 tsp Pepper powder
  • 1/2 tsp Dhaniya powder
  • 1/2 tsp Garam Masala
  • Chopped coriander
  • Salt as required.

How to Make Anda Malai

Boil eggs and cut into halves and keep aside.

In a pan, heat oil, add onion chilli paste and stir continuously without letting it brown.

After a while add ginger garlic paste and cook that until raw smell is gone.

To this add black pepper powder, dhaniya, jeera powder and salt and cook until the masala leaves oil on the sides.

After the masala has been cooked properly, switch off the flame.

Now carefully add milk and stir all the masala together (This is to make sure the milk doesn’t curdle).

After mixing milk properly, put it on the stove again and let it thicken for a bit.

Now add cream and mix the thick gravy well.

In the end add eggs and let both sides coat with the gravy for 2-3 mins each.
10.
Finish off by sprinkling garam masala, stirring for a while and garnish with chopped coriander. Serve hot and enjoy.
