Separate egg whites from egg yolks. Take care not to break the egg yolks.
Whip the egg whites using a whisk or electric mixer until foam peaks.
Add grated cheese, seasonings and veggies. Fold gently to mix. Make a well in the centre.
Line a baking tray with parchment paper and spoon the whipped egg whites onto it, forming cloud-like shapes.
Preheat your oven to 200 degrees Celsius (approximately 400 degrees Fahrenheit) and bake the egg whites for about 5-6 minutes or until they are cooked through and slightly golden brown.
Carefully place the egg yolks on top of the baked egg whites, making sure they stay intact. Return the tray to the oven for a couple of minutes to slightly cook the yolks while maintaining their rich, creamy consistency.
Pair them with your favourite sides or enjoy them as a standalone dish.
