This is a crustless cheesecake and has a burnt top layer that adds a distinctive caramel flavour.

Ingredients of Basque Cheesecake

  • 375 gms Cream cheese blocks, room temperature
  • 0.5 cup Caster sugar
  • 0.6 cup Whipping cream
  • 0.15 cup Flour
  • 0.5 tsp Vanilla bean extract
  • 4-5 Eggs, at room temperature, large

How to Make Basque Cheesecake

Preheat the oven to 220°C / 425°F with the shelf in the middle. Press scrunched parchment paper into an 8" springform pan.

Beat cream cheese for 2 minutes on medium speed in a batter mixer machine. Beat in the sugar on low speed for 10 more seconds.

In a separate bowl, hand whisk 1/4 cup cream with the flour till it becomes like a paste. Whisk in the remaining cream and vanilla. While beating on low, slowly pour the cream mix into the cream cheese and then add the eggs. Don't overbeat the eggs.

Pour the mix into a pan, and bang the pan on the counter. Pop any bubbles with a knife. Bake for 45 min to 65 minutes, until the top is deep golden.

Cool for 2 hours on the counter then 8 hours in the fridge uncovered. Slice, serve and enjoy!
