Ingredients of Blueberry Cheese Pastry

  • For blueberry compote:
  • 25 gms sugar
  • 15 gms pectin
  • 2 gram blueberry
  • For cookie base:
  • 50 gms butter
  • 25 gms icing sugar
  • 75 gms flour
  • For cheesecake mix:
  • 200 gms cream cheese
  • 60 gms icing sugar
  • 45 gms cooking cream
  • 1 Egg
  • 10 gms corn flour

How to Make Blueberry Cheese Pastry

For blueberry compote, place the blueberries and 2/3 of sugar in a cooking pan and start cooking over a slow flame.

Mix 1/3 sugar and pectin and keep aside.

When it starts to boil, add the pectin mix and cook for 1 min and keep aside to cool.

For cookies base, place the butter and sugar in a bowl and mix well. Add flour and mix well like a dough.

Prepare cheesecake mix:

Pre heat the oven at 160 degrees C for 15 minutes.

In a mixing bowl place cheese and sugar and mix slowly. Once both are mixed well and smooth, add egg and mix slowly.

Add cooking cream and mix well, then add corn flour and mix.
4.
In a 2 inch baking ring, line the cookie base, bake it till golden color and let it cool.
5.
Pour the mix on top of the cookie base and bake it at 155 degrees C in a water bath for 30 minutes.
